Recipe of the Week – Pan Roasted Shallots with Squash and Sprouts

Our recipe of the week uses our food of the week – shallots. These tasty little veg are members of the onion family and this recipe combines them with carotenoid-packed butternut squash and brussel sprouts (a cruciferous vegetable which may help your liver function). A tasty side dish to serve with meat or fish, or a great vegetarian dish in it’s own right if you add some tofu or sprinkle with a crunchy seed and nut topping.
