Let them eat cake!
There are some days when only cake will do. It’s the energy snack that will put the spring back in your step and twinkle back in your eye – but you know you don’t want to fall prey to the dreaded post-sweet treat energy slump. Yes we talk about blood sugar balance a lot – but only because we know it affects how so many people feel during their working day!
So what if we told you there was a cake you could make in less than 5 minutes that contained a portion of fruit, a not insignificant amount of protein, no added salt AND it tasted good? It does have added sugar….but you can halve the sugar content (I did this and they tasted fine) or maybe substitute some cinnamon or honey. And if you’re feeling daring try adding some chopped pecan nuts or mixed seeds to boost the protein content further and help avoid an energy slump. When I tried this out I added a teaspoon of ground almonds too. You don’t have to be a great baker or need any special equipment to make this simple recipe for an energy snack .
