On the twelfth day of Christmas…..
We hope that you have an enjoyed these alternative tastes in the lead up to Christmas day. We hope you enjoy a very merry Christmas, and even though the turkey isn’t even in the oven yet, we wanted to share some of our favourite ideas to turn those delicious Christmas dinner leftovers into healthy snacks and tasty treats for boxing day and beyond.
Soup – making your own is simple and rewarding, there’s nothing like a steaming bowl of hot thick soup after a bracing winter walk. If you’re feeling adventurous make your own stock by boiling up the turkey bones with an onion, a couple of carrots and some celery then add to turkey meat and left over vegetables to cook up a tasty Christmas broth. Add lentils or pearl barley or other pulses and grains to add texture.
Bubble and Squeak – leftover roast vegetables chopped up and cooked in a little oil (in a non-stick frying pan) make a delicious boxing day brunch. Golden and crunchy, they’re like a tasty potato cake that you can serve with leftover cold meat or a poached egg. Perfect for different diet choices whether that’s paleo diet, gluten free diet or vegan diet (without the egg).
Curry – it’s a classic but a good one. Turkey has a versatile flavour that makes a great curry. Add ginger, turmeric, garlic and chillies and maybe some chopped tomatoes for a warming meal on a chilly day. Another great paleo snack, also ideal for those who need a gluten free snack.
